Warm the oven to350 F. Heat a large ovenproof skillet over medium heat and add the oil and vegetables. Sauté until tender. Remove from skillet and set aside.
Beat eggs in your large bowl and add the cooked vegetables—season with freshly ground black pepper. Pour mixture into the skillet and put in the oven.
Bake for 12 to15 minutes or until eggs is firm to the touch. Top with crumbled bacon and serve immediately.
