Spinach Mushroom Frittata

Spinach Frittata

Preparation time: 10 minutes

Cooking time: 12-15 minutes

Servings: 4

Ingredients:

  • 1 tablespoon olive or coconut oil
  • ½ small onion, chopped
  • ½ cup mushrooms, sliced
  • 2 cups baby spinach leaves    
  • 8 large eggs
  • Freshly ground black pepper, to taste
  • 4 strips bacon, cooked and crumbled

Directions:

  1. Warm the oven to 350 F.
  2. Heat a large ovenproof skillet over medium heat and add the oil and vegetables.
  3. Sauté until tender.
  4. Remove from skillet and set aside.
  5. Beat eggs in your large bowl and add the cooked vegetables—season with freshly ground black pepper.
  6. Pour mixture into the skillet and put in the oven.
  7. Bake for 12 to 15 minutes or until eggs is firm to the touch.
  8. Top with crumbled bacon and serve immediately.
