Cooked Ham Panini With Roasted Peppers

Serves 4

A delicious panini with cooked ham, roasted peppers and mozzarella cheese. Very healthy with mashed avocado seasoned with salt and pepper.

Cooked Ham is high in iron, thiamine and selenium.

Red bell peppers are an excellent source of vitamin C, vitamin A, and fiber. Bell peppers also have antioxidant properties, which may help to protect against diseases such as cardiovascular disease and some cancers.

Mozzarella cheese is a good source of protein, phosphorus, and calcium. Low in fat and sodium

Avocados are a source of vitamins C, E, K, and B6 and riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium.

Ingredients

4 pieces of ciabatta bread, sliced open

Salt and pepper to taste

8 slices of cooked ham

8 thin slices roasted red bell peppers

1 avocado mashed

Olive oil spray

Preparation

Preheat a panini press. If you do not have a panini press, place the sandwich onto a heated skillet or griddle, top with a weight, such as another heavy pan. When the bread is toasted, flip the sandwich and toast the other side

Mashed the avocado and add salt and pepper to taste

Spread the mashed avocado on the top of each piece of bread.

Place the ham, red bell pepper, and mozzarella cheese on 4 slices

Close the sandwiches and lightly spray the tops with a little olive oil.

Place the sandwiches on the panini, press one at a time, close, and cook for 5 minutes.
