Ingredients

4 Egg

4 slices Bacon, Cooked (chopped)

Salt & Black Pepper (to taste)

1 tsp Extra Virgin Olive Oil

6 cups Baby Spinach

3 ozs Cheddar Cheese (shredded)

Directions

  1. In a small bowl, whisk the eggs and add the bacon.
  2. Season with salt and pepper.
  3. Heat a skillet over medium heat and drizzle the oil.
  4. Once hot, add the spinach and cook until just wilted, about one minute. 3
  5. Pour in the egg mixture, add the cheese, and cook, stirring occasionally, until the eggs are cooked to your liking.
  6. Remove from heat and enjoy!.
